Strained just enough to catch the wax, never fine-filtered. That means the pollen, enzymes, and flavor stay in the jar.

Big producers pasteurize honey for a clear, uniform look. We never heat ours, so it stays raw, the way it left the hive.

Not at all, that is a good sign. Raw, unheated honey naturally crystallizes over time, which is proof it has not been processed. Set the jar in warm (not hot) water and it turns back to liquid, or enjoy it spreadable.
